“Ghanaian Jollof lacks flavor, Nigerian Jollof is the best” – Hilda Baci

Hilda Baci, a Nigerian chef, and Guinness World Record holder, has gone viral on the internet for comparing “Jollof” from Ghana and Nigeria.

The Chef recently traveled to the UK for the first time, and during her speech on a podcast, she expressed her displeasure with Ghanaian Jollof, calling it bland.

Hilda claims that because Ghanaian Jollof is bland, Nigerian Jollof is superior.

“Nigerian Jollof is better than Ghanaian Jollof. I’ve been to Ghana, I’ve eaten their jollof. I’ve done  a competition with a Ghanaian chef. For him, that was his best representation of Ghanaian jollof and I have seen the recipe, not one…,” 

Let me tell you because I wasn’t there and I don’t have a lot of information so I  can’t say why this is but with Nigerian Jollof, Nigerians don’t play about flavour building. We’re very intentional about building flavour,

“Ghanaians tend to make their Jollof rice…the major base is more the paste than the Jollof mix which is what you make yourself and that goes a long way in ensuring that the flavour comes out great. Ghanaians don’t smoke their Jollof rice.” She added.
